Preheat the oven to 375°F (190°C) and spray a baking dish with cooking spray.
If the chicken breasts are uneven in thickness, tenderize them by pounding with a meat mallet (in a Ziploc bag and on a flat surface) until they are ¾ inch to 1 inch thick.
Sprinkle the chicken breasts with grated parmesan cheese and freshly ground black pepper on both sides.
Place them in the baking dish.

Pour ¼ cup of Caesar dressing over each breast, then sprinkle grated parmesan on top.

Place the chicken in the oven and bake for 30 minutes or until the chicken is cooked*.
Set the oven to broil and broil the breasts for 2 to 4 minutes or until the chicken becomes golden, watching carefully to avoid burning.
Remove from the oven, lightly cover with foil, and let the chicken rest for 5 to 10 minutes before serving.
* Health Canada recommends cooking poultry to a minimum internal temperature of 74°C/165°F. A quick and effective way to check that the chicken is sufficiently cooked and to avoid overcooking it is to use a cooking thermometer.
