Ingredients

2 pie crusts 
6 Cortland apples, cut into small cubes (625 g total of apples after cores and peels removed)
2 teaspoons of lemon juice
1 tsp of sugar
1/3 cup (45 g) of flour

Creamy Sugar
1 cup (200 g) of sugar
1 cup (200 g) of brown sugar
1 cup (250 g) of 35% cream or 15% cooking cream

Egg wash 
1 beaten egg

Preparation

In a large bowl, combine the apple cubes, lemon juice, sugar, and flour. Mix well

In a saucepan, heat the sugar, brown sugar, and cream over medium heat without stirring. Cook until the mixture reaches 114 °C (235 °F) on a candy thermometer. Remove from heat and let the temperature drop to 40 °C (120 °F). Do not stir.

Pour the mixture over the apples. Mix.

Transfer the apple and creamy sugar mixture into a 9-inch pie crust, then cover it with a second crust. Brush with the beaten egg.

Bake in the oven on the bottom rack at 400 °F for 15 minutes. Reduce the oven temperature to 350 °F and continue baking for 30 minutes. Turn off the oven and take the pie out 20 minutes later.

IMPORTANT: Let it cool completely at room temperature before cutting.
