A universal basic recipe, then... add the flavors you love!
A good muffin batter recipe is essential in cooking! Then, you only need to add your favorite berries!
Raspberries, strawberries, blackberries, or triple berries... it's up to you to choose!
Ingredients
1 3/4 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 tsp baking powder
6 tbsp vegetable oil
1 egg, beaten
1/2 cup milk
1 1/2 tsp white vinegar 1
tsp vanilla extract
1 cup blueberries (or frozen, thawed)
coarse sugar for garnish
Preparation
In a small bowl, mix the milk and vinegar. (or 1/2 cup buttermilk)
In a large bowl, mix the flour, sugar, salt, and baking powder. Add the blueberries.
Add to the milk and vinegar mixture, the oil, egg and vanilla. DO NOT MIX
Let rest for 15 minutes.
Preheat the oven to 450 degrees F and grease a muffin tin.
Divide the batter evenly in the tin and sprinkle with coarse sugar.
Bake in the oven for 10 minutes, reduce heat to 350 degrees F and bake an additional 10 minutes.
