Ingredients

  • 1 egg, lightly beaten
  • salt and pepper
  • 2 cups of Panko breadcrumbs
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 1/2 pounds sole fillets
  • 1/2 cup mayonnaise
  • 1/4 cup fresh chopped parsley
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons horseradish

Preparation

  1. Preheat the oven to 475 degrees f and line a baking sheet with aluminum foil, then spray with nonstick spray.
  2. In a shallow dish, combine the egg, salt, and pepper.
  3. In another bowl, mix the Panko breadcrumbs, Cajun seasoning, and oil.
  4. Dip your fish in the egg mixture, then in the Panko mixture.
  5. Transfer to the prepared baking sheet.
  6. Bake for 12 to 15 minutes.
  7. In a small bowl, mix the mayonnaise, parsley, mustard, lemon juice, and horseradish.
  8. Serve with the sauce and lemon slices.
