The Best Homemade Kebabs Recipe

What could be better than a delicious kebab? However, when the craving hits, we usually order them from a restaurant.

It's possible to cook just as good, if not better, at home!


Ingredients

2.2 lb (1 kg) boneless, skinless chicken thighs

Olive oil


Marinade:

1 cup (250 ml) plain yogurt

3 minced garlic cloves

2 teaspoons (10 g) ground cumin

2 teaspoons (10 g) paprika

1 1/2 teaspoons (7 g) ground coriander

1 teaspoon (5 g) cayenne pepper, optional

1/2 teaspoon (3 g) black pepper

1 1/2 teaspoons (7 g) onion powder

2 1/2 tablespoons (37 g) tomato paste

1 1/2 teaspoons (7 g) salt

1 tablespoon (15 ml) lemon juice

2 tablespoons (30 ml) olive oil

Choice of accompaniments:

Lebanese bread / flatbreads / pita bread, warmed

Finely shredded iceberg lettuce

Sliced tomatoes

Hummus

Garlic sauce

Tabbouleh

Sliced red onion

Grated cheese

Chili sauce

Mejadra (Middle-Eastern rice with lentils)


Preparation

  1. Mix all marinade ingredients in a large bowl. Add chicken and stir to coat well.

2. Cover and marinate in the refrigerator for at least 3 hours, ideally 24 hours. If only 3 hours, add 1/2 teaspoon (3 g) salt.

3. Preheat the oven to 430°F/220°C (standard) or 390°F/200°C (convection).

4. Choose a suitably sized dish so that the skewers rest on the edges and the chicken does not touch the bottom too much. Cover it with foil.

5. Divide the chicken into two. Fold a piece of chicken in half then skewer it onto two skewers (see video). Repeat and push the chicken pieces together. Repeat with another skewer.

6. Place the 2 skewers on the edges of the dish. Drizzle with oil.

7. Bake for 35 minutes or until the surface is golden with some charred bits.

8. Drizzle the cooking juices over the chicken. Turn, drizzle with a little oil, and bake for another 20 minutes (or more if the thighs are large). Grill for a few minutes if desired.

9. Baste again with the cooking juices and let rest for 5 minutes.

10. Stand the skewers vertically or at an angle and slice the meat thinly.

11. Serve in sandwich form within pitas with sauce and vegetables of your choice or on a plate with desired sides.
