The Best Old-Fashioned Apple Pie Recipe

This apple pie recipe with the best ingredients will allow you to make an old-fashioned apple pie just like the ones we enjoyed at our grandmothers'. 


Ingredients

Crust:

  • 2 1/2 cups (725 ml) of all-purpose flour
  • 3 sticks of unsalted cold butter, cut into cubes
  • 1/2 cup (125 ml) of ice water
  • 3 teaspoons (15 ml) of sugar
  • 1/4 teaspoon (1.25 ml) of salt

Filling:

  • 8 peeled and sliced apples 
  • 2 tablespoons (30 ml) of lemon juice
  • 2/3 cup (170 ml) of sugar, plus 1 tablespoon for the top of the crust
  • 1/4 cup (65 ml) of brown sugar
  • 1/4 cup (65 ml) of all-purpose flour
  • 1 egg yolk
  • 2 tablespoons (30 ml) of butter
  • 1 teaspoon (5 ml) of cinnamon
  • 1/4 teaspoon (1.25 ml) of nutmeg
  • a bit of water


Preparation

Preheat the oven to 375º F (190ºC).

In a food processor, mix the flour, sugar, and salt. Then add the cold butter.

Pour the cold water one tablespoon at a time to obtain a crumbly mixture. 

Remove the dough from the food processor, wrap it in plastic wrap, and refrigerate for at least 2 hours. 

In a large bowl, mix the apples with the lemon juice, flour, sugars, cinnamon, and nutmeg. Set aside.

Once the dough is well chilled, remove it from the plastic wrap and divide it in half. Return one half to the refrigerator wrapped in plastic wrap.

On a lightly floured surface, roll out the dough to form a circle with a circumference of 12-14 inches and about 1/4 inch thick. 

Gently transfer the dough into a pie dish, lightly pressing the sides and bottom so that the dough sticks well to the dish. Trim the dough that exceeds the dish, maintaining about 1/2 inch that overhangs and fold it over the edge of the dish.

Remove the second half of the dough from the refrigerator and roll it out into a circle the same size as the previous one.

Pour the apple mixture into the dish, over the crust, and cover the top of the apples with pieces of butter.

In a bowl, beat your egg yolk and add a little water. Brush the edges of the dish covered by the dough with the egg mixture.

Completely cover the top of the pie with the remaining dough. Make holes in the top of the dough to allow steam to escape.

Seal the edges of the pie with a fork.

Brush the egg mixture over the top of the dough and sprinkle with sugar.

Bake in the oven for 50 minutes, or until the crust is golden.
