In a large skillet, cook the bacon over medium-high heat until crispy. Then place the bacon in the slow cooker.

Salt and pepper the beef. Place the beef in the skillet and sear each side for 2-3 minutes. Transfer the beef to the slow cooker.

Add the red wine to the skillet to deglaze by scraping the bottom and sides of the skillet.
Let simmer and reduce, then slowly add the chicken broth, tomato sauce, and soy sauce. Slowly incorporate the flour while whisking.

Add the garlic, thyme, carrots, potatoes, and mushrooms to the slow cooker, then add the sauce to the slow cooker.

Cook the contents of the slow cooker on low, until the beef is tender, for 8-10 hours or on high for 6-8 hours.
Garnish with fresh parsley and serve with mashed potatoes, if desired.
