Ingredients

  • 1/2 cup (125 ml) hoisin sauce
  • 1/4 cup (65 ml) rice vinegar
  • 3 tablespoons (45 ml) soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons (30 ml) cornstarch
  • 1 1/2 cups (375 ml) chicken broth
  • 1 1/2 pounds boneless chicken breast, cut into 1-inch pieces
  • 1 tablespoon (15 ml) vegetable oil
  • 2 green onions, sliced, greens and whites divided
  • 4 cloves garlic, minced
  • 2 tablespoons (30 ml) fresh ginger
  • 1/2 teaspoon (2.5 ml) crushed red pepper

Breading

  • 3 egg whites
  • 1 1/2 cups (375 ml) cornstarch
  • 1/2 cup (125 ml) all-purpose flour
  • 1/2 teaspoon (2.5 ml) baking soda
  • Pepper and salt
  • 4 cups (1,000 ml) vegetable oil for frying

Preparation

  1. In a bowl, whisk hoisin sauce, rice vinegar, soy sauce, brown sugar, cornstarch, and chicken broth.
  2. Place chicken in a large ziploc bag and pour 6 tablespoons of the hoisin mixture over the chicken, seal the bag and marinate in the refrigerator for 30 minutes.
  3. Meanwhile, heat 1 tablespoon of oil. Add the white part of the green onions, garlic, ginger, and crushed red pepper. Add 2 cups of hoisin sauce mixture and cook, stirring constantly, until the mixture thickens. Remove from heat and cover.
  4. In a bowl, whisk egg whites until foamy and set aside.
  5. In another bowl, mix cornstarch with flour and baking soda, then add the rest of the hoisin sauce mixture and stir.
  6. Heat oil to 350 degrees F.
  7. Meanwhile, remove chicken from the refrigerator and remove chicken from marinade.
  8. Place half of the chicken in the egg whites and coat them. Then dip them in the cornstarch mixture.
  9. Cook in oil for about 3 - 4 minutes, turning chicken during cooking.
  10. Coat with sauce and garnish with green onions.
