It's always comforting when it's cold!
The classic French onion soup is one of the most delicious soups in the world! At the heart of winter, it's the ultimate comforting dish, both as a starter and as an entire dinner.
Here's how to make the most flavorful onion soup, easily.
Ingredients:
4 tablespoons (60 ml) unsalted butter
2 tablespoons (30 ml) olive oil
6 large yellow onions, peeled, halved, and thinly sliced (about 2 1/2 pounds / 1.25 kg)
1 tablespoon (15 ml) minced garlic (or 4 cloves of minced garlic)
1/4 cup (65 ml) all-purpose flour
1/2 cup (125 ml) dry white wine or red wine
2 sprigs of fresh thyme, roughly chopped
6 cups (1 1/2 liters) beef broth or broth
1 teaspoon (5 ml) beef bouillon powder
2 whole bay leaves (dried or fresh)
Salt and pepper to taste
1 batch of garlic and cheese bread
Preparation:
1. In a large pot over medium-low heat, heat the olive oil and melt the butter.
2. Add the onions and mix well to thoroughly coat them with the oil and butter.
3. Cover and cook for 20 minutes, stirring every five minutes or so, until the onions have softened.
4. Increase the heat to medium-high and add 1/2 teaspoon of salt. Stir and continue cooking for 15 more minutes, or until the onions are golden, tender, and caramelized. (The bottom of the pot will also brown during the cooking process. That's where all the flavor is).
5. Stir in the garlic and cook for a minute, add the flour and cook for about 4 minutes to lightly brown.
6. Add the wine to deglaze the pan and scrape the browned bits stuck to the bottom of the pan.
7. Add the thyme and let the wine simmer for 2 minutes until it reduces by half.
8. Add the beef broth, bouillon, and bay leaf; bring to a boil.
9. Reduce the heat to low and let simmer gently, partially covered with a lid, for 30 to 40 minutes.
10. While the soup simmers, prepare 1 loaf of garlic cheese bread or individual garlic bread portions.
11. To serve, taste and season with a little extra salt and pepper, to taste.
12. Pour into bowls and top with 1 or 2 slices of cheese toast.
