INGREDIENTS

  • 3/4 cup unsalted butter, melted
  • 225 g dark chocolate, chopped
  • 6 egg yolks
  • 1 1/4 cup powdered sugar
  • 4 tablespoons flour
  • 6 egg whites
  • 225 g dark chocolate
  • 225 ml cream (35% or 15% country)

PREPARATION

  1. Preheat the oven to 350°F. Grease and line the bottom of a 20 cm springform pan with parchment paper. Set aside.
  2. Pour the hot butter over the chopped chocolate and stir quickly until melted.
  3. Let cool for about ten minutes before adding the egg yolks, powdered sugar, and flour, then stir well (it will be a little grainy).
  4. In another large bowl, whisk the egg whites until they form stiff peaks.
  5. Pour half of the chocolate mixture into the whites and gently fold, ensuring to incorporate a lot of air into the mixture.
  6. Repeat this process with the remaining mixture.
  7. Pour into the prepared pan and bake for about 40 minutes. Keep in mind that the cake is quite moist, it may seem a bit wet at first.
  8. Let cool in the pan on a rack.
  9. Heat the cream in a small saucepan. When hot, but not boiling, pour over the dark chocolate and stir vigorously.
  10. Once cooled, unmold the cake and top with the chocolate ganache.
