Preparation
Boil the potatoes until they are tender. Drain the potatoes and set aside.

Cook the bacon in a pan over medium-low heat until crispy.

Remove the bacon with a slotted spoon and place on a paper towel-lined plate to drain.
Keep about 2 tablespoons of bacon fat and remove the pan from the heat.
Add the mayonnaise, mustard, sugar, and salt to the bacon fat and mix.

In a large bowl, mix the potatoes, eggs, celery, onion, and green bell pepper.
Pour the dressing over the ingredients and stir gently to coat well.

Then incorporate the bacon.
Cover and refrigerate for at least 3 hours before serving.
