There are so many white cake recipes, it's sometimes hard to know where to start! But this recipe deserves all the honors.
Ingredients
1 cup salted butter, softened
1½ cups sugar
2 teaspoons almond extract
3½ cups cake flour
4 teaspoons baking powder
½ teaspoon salt
6 large egg whites, room temperature
1½ cups milk, room temperature
Preparation
Butter three 9-inch cake pans. Line the bottom with parchment paper. Preheat oven to 350 degrees f.
In a large bowl, cream the butter and sugar with an electric mixer, add the almond extract.
In a glass measuring cup, combine the eggs and milk, stir with a fork.
In a second bowl, mix the flour, baking powder, and salt.
Add ⅓ of the dry ingredients to the butter mixture and mix. Add half of the milk mixture and stir. Add another ⅓ of the dry ingredients, mix, and add the milk mixture. Add the remaining dry ingredients and mix.
Divide the batter among the 3 prepared pans.
Bake at 350°F for 25 to 30 minutes.
Let cool for 5 minutes before unmolding and allow to cool completely before frosting.
With an electric mixer, whip the softened butter and almond extract. Slowly add the powdered sugar, about 1 cup at a time. Pour in a little milk if the frosting becomes too thick.
