Back to the good old days, with the must-have potato candy.

Ingredients
1 small potato peeled and cut into 1-inch pieces
6 to 8 cups powdered sugar
⅔ cup peanut butter 
½ teaspoon vanilla (optional)

Preparation
In a saucepan, boil your potato until tender.
In a large bowl, mash your potato and add 4 cups of powdered sugar.
Add vanilla, mix again.
Now add 1 cup of powdered sugar at a time, until the mixture is thick
line a baking sheet with parchment paper and generously sprinkle it with powdered sugar. 
Place the mixture on the paper and sprinkle it with powdered sugar. 
Roll the dough to 1/4 inch thick.
Spread peanut butter evenly over the candy.
Roll tightly,  then wrap it in plastic wrap.
Cut the roll in half and place your rolls in a large Ziploc bag.
Put the bag in the fridge for 30 minutes.
Cut into 1-inch slices and store in an airtight container for up to 2 weeks.
