INGREDIENTS

  • 1 cup + 1 tablespoon of flour
  • 1 cup of old-fashioned oats
  • 2 teaspoons of baking powder
  • 1/4 teaspoon of salt
  • 2 large eggs, lightly beaten
  • 1 cup of plain Greek yogurt
  • 1/3 cup of organic raw honey (unpasteurized)
  • 1/4 cup of milk
  • 2 teaspoons of vanilla extract
  • 1 cup of blueberries, frozen or fresh

PREPARATION

  1. Preheat the oven to 350°F. Place paper liners in a 12-cavity muffin tin.
  2. Mix the cup of flour, oats, baking powder, and salt in a large bowl.
  3. In another bowl, whisk together the eggs, yogurt, honey, milk, and vanilla until smooth.
  4. Incorporate the dry ingredients into the wet ingredients and stir just to combine.
  5. Mix the remaining tablespoon of flour with the blueberries, then gently fold them into the batter.
  6. Divide into the 12 cavities and bake for 18 to 20 minutes, until the tops are golden and a toothpick inserted in the center comes out clean.
  7. Let the muffins cool for 5 minutes in the tin before removing them and allowing them to cool completely on a rack.
