INGREDIENTS

  • 1 cup + 1 tablespoon flour
  • 1 cup old-fashioned oats
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1 cup plain Greek yogurt
  • 1/3 cup raw, organic honey (unpasteurized)
  • 1/4 cup milk
  • 2 teaspoons vanilla extract
  • 1 cup blueberries, frozen or fresh

PREPARATION

  1. Preheat the oven to 350°F. Place paper liners in a 12-cavity muffin tin.
  2. In a large bowl, mix the cup of flour, oats, baking powder, and salt.
  3. In another bowl, whisk together the eggs, yogurt, honey, milk, and vanilla until smooth.
  4. Incorporate the dry ingredients into the wet ingredients and stir only to combine.
  5. Toss the remaining tablespoon of flour with the blueberries, then gently fold into the batter.
  6. Divide into the 12 cavities and bake for 18 to 20 minutes, until the tops are golden and a toothpick inserted in the center comes out clean.
  7. Let the muffins cool for 5 minutes in the tin before removing them and allowing them to cool completely on a wire rack.
