My favorite!
INGREDIENTS
- 2 cups of brown sugar
- 6 tablespoons of flour
- 12 oz of evaporated milk
- 4 tablespoons of butter
- 2 teaspoons of cinnamon
- 1/2 teaspoon of salt
- 1 teaspoon of vanilla
- 1 pie crust for a 9-inch pan
PREPARATION
- Preheat the oven to 400°F.
- Whisk the brown sugar and flour together in a small saucepan.
- Place over medium heat and add the evaporated milk, butter, cinnamon, and salt while whisking.
- Cook until the mixture is fully combined and begins to simmer.
- Continue whisking and let simmer gently for a minute. The mixture should start to thicken.
- Remove from heat and add the vanilla. Stir.
- Pour the mixture into the prepared cold pie crust and bake in the oven for 5 minutes.
- Reduce the oven temperature to 350°F and continue baking for 25 minutes.
- Cool on a rack for 2 hours before cutting and serving.
With a scoop of vanilla ice cream or cream, it's heaven!
