The traditional Caesar dressing.
Ingredients
1 egg
1 cup (250 ml) olive oil
1/4 cup (65 ml) Parmigiano Reggiano cheese
2 cloves garlic
4 tbsp (60 ml) fresh lemon juice
1 1/2 tsp (7.5 ml) Dijon mustard
Pepper and salt to taste
1 tsp (5 ml) anchovy paste
Preparation
1-In a bowl, ideally in a mason jar. Mix the egg, olive oil, cheese, garlic, lemon juice, mustard, anchovy paste, salt, and pepper.
2-Using a small hand blender, mix all the ingredients well. This will only take a few seconds.
3-Use now or refrigerate.
