This vegetable and sausage foil packet will make a perfect meal for busy evenings and will please everyone.

Ingredients

  • 16 ounces of Italian sausages or choice, sliced
  • 2 cups of red potatoes, chopped
  • 3/4 cup yellow onion, diced
  • 1/2 cup mushrooms, diced
  • 2 peppers, chopped
  • 4 cloves of garlic
  • 4 1/2 tablespoons of olive oil

Seasonings

  • 1/2 tablespoon each: dried basil, dried oregano, dried parsley, garlic powder
  • 1/2 teaspoon each: onion powder, dried thyme
  • 1/8 teaspoon red pepper flakes
  • 1/3 cup freshly grated Parmesan cheese
  • fresh parsley, salt and pepper

Preparation

  1. Light your barbecue and prepare 4 to 6 large sheets of aluminum foil. Spray them with cooking spray.

  2. In a large bowl, add the sausages, vegetables, and garlic. Add the olive oil and all the seasonings.

  3. Divide the mixture evenly between the prepared aluminum foil sheets. Try to place 1 clove of garlic in each packet.

  4. Seal the foil packets.

  5. Cook on the barbecue for 25 to 30 minutes, turning the packets halfway through.

  6. Top with freshly grated Parmesan and serve immediately.
