Here is a salmon recipe that will beat any fish dish you might order at a nice restaurant! Salmon fillets filled with a tasty mixture of cream cheese, spinach, parmesan, and garlic. 

If you've never tried stuffed salmon, now is the time to jump in! It's a delicious, easy-to-prepare recipe, ready in just a few minutes, low in carbs, and can be prepared either in the oven or by frying. What more could you ask for?

Ingredients

  • 4 salmon fillets, skinless
  • 2 tablespoons (30 ml) lemon juice
  • 2 tablespoons (30 ml) olive oil, divided
  • 1 tablespoon (15 ml) unsalted butter
  • 4 ounces (120 g) cream cheese, at room temperature
  • 4 ounces (120 g) frozen spinach, thawed
  • 1/4 cup (65 g) finely grated parmesan
  • 2 teaspoons (10 g) minced garlic
  • Salt and pepper to taste
  • For the garlic butter (optional)
  • 1 tablespoon (15 g) unsalted butter
  • 1 tablespoon (15 g) minced garlic
  • 1 tablespoon (15 ml) lemon juice

Preparation:

  1. Place the salmon fillets on a flat surface and season them on both sides with salt, pepper, 1 tablespoon of olive oil, and lemon juice. 
  2. Cut a slit or pocket about 3/4 of the way through, being careful not to cut all the way through the fish.
  3. Squeeze the spinach to release excess liquid 
  4. In a medium-sized bowl, mix spinach, cream cheese, parmesan, and garlic. Salt and pepper to taste.
  5. Fill the salmon "pockets" with 1-2 tablespoons of spinach dip and spread it evenly with the back of the spoon.

Cooking method on the stove:

  1. Heat the butter and the remaining oil in a frying pan over medium-high heat. 
  2. Add the salmon and fry until golden (about 6 to 7 minutes). 
  3. Gently flip and cook on the other side until golden and well-cooked (another 6-7 minutes, depending on the size of your fillets).

Optional: cover with a lid and continue cooking for an additional 2-3 minutes if necessary until perfectly cooked.

Transfer to a warm dish and reserve the cooking juices to make the garlic butter.

Garlic butter:

  1. Melt the butter in the remaining oil/juices in the salmon cooking dish. 
  2. Add the garlic and lemon juice; sauté until the garlic flavors the mixture (about 30 seconds).
  3. Remove and serve with the salmon.

Oven cooking method:

  1. Preheat the oven to 350 °F (175 °C). 
  2. Place the stuffed salmon fillets in a lightly greased baking dish. 
  3. Bake for 10-15 minutes or until the salmon is well-cooked, opaque in the center, and flakes easily with a fork.
  4. Pour the cooking juices into a pan or skillet and prepare the garlic butter as explained above, if desired.
