
Not complicated, this is the perfect kind of meal for a sunny Friday!
As my teen would say... It's totally GOOD!
Ingredients
10 ounces of pasta
3 tablespoons of butter, divided
3 cloves of garlic, minced
1 pound of shrimp
3 tablespoons of fresh parsley, chopped
2 tablespoons of flour
3/4 cup of milk
1/4 cup of chicken broth
1 cup of shredded mozzarella
1/4 cup of Parmesan
Pepper
2 to 3 fresh tomatoes, chopped
Preparation
Preheat the oven to 350 degrees f.
Cook the pasta according to the package instructions.
In a pan, combine 1 tablespoon of butter, garlic, shrimp, 2 tablespoons of parsley, and salt.
Cook the shrimp for about 4 minutes. Set aside
Add the rest of the butter then whisk in the flour.
Incorporate milk and chicken broth, then bring to a boil
Add 3/4 cup of mozzarella and Parmesan cheese.
Once the cheese has melted, add the shrimp, pasta, and fresh tomatoes.
Top with the remaining cheese and transfer to the oven for about 8 minutes.
