These oatmeal cookies are so delicious, they'll take you back to your childhood for a moment. Better than mom's or grandma's.
INGREDIENTS:
1 large egg
½ cup (112 grams) unsalted butter
½ cup (100 grams) brown sugar
¼ cup (112 grams) sugar
1 teaspoon (5 ml) vanilla
1 ½ cups (120 grams) oats
¾ cup (86 grams) flour
½ to 1 teaspoon (3 to 5 ml) cinnamon
½ teaspoon (3 ml) baking soda
A pinch of salt
A handful of chocolate chips
½ cup (75 grams) raisins or nuts (optional and to taste)
PREPARATION:
In a mixer, combine the egg, butter, sugar, vanilla and beat on medium-high speed until smooth.

At low speed, add the oats, flour, cinnamon, baking soda, and salt, until well combined.
Then add the chocolate chips, raisins, and/or nuts with a spatula.

Form balls of dough and place them on a baking sheet, flattening them slightly.
Cover with plastic wrap and chill in the refrigerator for at least 2 hours before baking in the oven at 350°F (180°C) for 11 minutes.

Let cool for at least 10 minutes before serving.

These cookies keep for about a week at room temperature in an airtight container or 6 months in the freezer. The dough can be stored in the refrigerator for 5 days before baking or frozen for 4 months.
