This pie will delight your taste buds! With the addition of a layer of chocolate pudding, it's so good!
Ingredients
- 1 refrigerated pie crust
- 1 package of 8 ounces of cream cheese, softened
- 2/3 cup powdered sugar
- 1 teaspoon coconut extract
- 1 container of 8 ounces of Cool Whip, thawed and divided
- 1 1/2 cups sweetened shredded coconut, divided
- 1 1/2 cups milk
- 1 packet of instant chocolate pudding mix
Preparation
- Preheat the oven to 450 degrees f and bake the pie crust for 10 minutes.
- In a large bowl, whisk the cream cheese, powdered sugar, and coconut extract.
- Add 2/3 cup of the whipped topping and whip again.
- Stir in 1 cup of coconut.
- Pour into the cooled pie crust.
- In a second bowl, whisk the milk and the pudding packet. Refrigerate for 3-5 minutes.
- Pour over the coconut filling.
- Top with the remaining Cool Whip.
- On a baking sheet, spread the remaining coconut flakes.
- Bake at 350 degrees for 4-5 minutes, stirring often.
- Sprinkle on top of the pie
- Store in the refrigerator in an airtight container.
