Three-layer pie that absolutely leaves no one indifferent.

This pie will delight your taste buds! With the addition of a layer of chocolate pudding, it's so good!

Ingredients

  • 1 refrigerated pie crust
  • 1 package of 8 ounces of cream cheese, softened
  • 2/3 cup powdered sugar
  • 1 teaspoon coconut extract
  • 1 container of 8 ounces of Cool Whip, thawed and divided
  • 1 1/2 cups sweetened shredded coconut, divided
  • 1 1/2 cups milk
  • 1 packet of instant chocolate pudding mix

Preparation

  1. Preheat the oven to 450 degrees f and bake the pie crust for 10 minutes.
  2. In a large bowl, whisk the cream cheese, powdered sugar, and coconut extract.
  3. Add 2/3 cup of the whipped topping and whip again.
  4. Stir in 1 cup of coconut.
  5. Pour into the cooled pie crust.
  6. In a second bowl, whisk the milk and the pudding packet. Refrigerate for 3-5 minutes.
  7. Pour over the coconut filling.
  8. Top with the remaining Cool Whip.
  9. On a baking sheet, spread the remaining coconut flakes.
  10. Bake at 350 degrees for 4-5 minutes, stirring often.
  11. Sprinkle on top of the pie
  12. Store in the refrigerator in an airtight container.
