Heat a large skillet over medium-high heat. Add olive oil and sear the chicken until golden and cooked, about 3-5 minutes on each side. Remove the chicken and set aside.
Add garlic and cook for about 1 minute.
Add the heavy cream, chicken broth, Italian seasoning, and grated parmesan. Whisk the mixture over medium-high heat until it begins to thicken, about 5-8 minutes.

Add the chopped spinach and sun-dried tomatoes. Bring to a boil and let cook until the spinach begins to wilt.

Add the seared chicken to the skillet and mix to coat it well with the sauce. Simmer the chicken in the sauce until completely cooked. Serve on pasta, if desired.
