Vietnamese Shrimp Rolls with Peanut Sauce

These rolls are simple to prepare and contain good ingredients that you will enjoy eating. 

And we can't resist the homemade peanut sauce!


Ingredients

  • 7 to 14 round rice paper sheets of 22 cm / 8.5 in 
  • 11 small cooked shrimp (about 12 cm / 5 in long, unpeeled)
  • 50 g / 1.5 oz of dry vermicelli noodles 
  • 7 soft lettuce leaves (like Boston lettuce)
  • 14 mint leaves
  • 1 cup (250 ml) of bean sprouts


Peanut Sauce

  • 1 tablespoon (15 ml) of peanut butter, preferably creamy
  • 2 tablespoons (30 ml) of hoisin sauce
  • 1 1/2 tablespoons (22.5 ml) of white vinegar (or lime juice)
  • 1/3 cup (85 ml) of milk (or water)
  • 1 minced garlic clove
  • 1/2 teaspoon (2.5 ml) of chili pepper, sambal oelek, or chili paste (optional)


Preparation

Mix the ingredients for the peanut sauce.

Then, heat in the microwave for 30 seconds. 

Mix again until smooth. Set aside and let cool. The thickness and seasonings can be adjusted once the sauce has cooled.

Place the vermicelli in a bowl and cover with warm water for 2 minutes, then drain (or follow the package instructions).

Peel the shrimp, cut them in half lengthwise and devein them.

Place vermicelli and bean sprouts in a lettuce leaf, then roll. Repeat with the other lettuce leaves.

Fill a large bowl with hot water. Place two rice paper sheets together (if using 2 sheets at a time). The smooth side is the outside of the roll. 

Submerge the rice paper sheets in the water for 2 seconds. 

Place the two rice paper sheets on top of each other, on a board or on the counter, smooth side down.

On the upper part of the rice sheet, place 3 shrimp with a mint leaf in between.

Place the lettuce roll in the middle of the rice sheet.

Fold the edges of the rice sheet and roll to cover the lettuce.

Then, roll the rice sheet tightly. The rice paper is sticky and will seal easily.

Serve immediately with the peanut dipping sauce.
