Preparation
In a bowl, combine the red potatoes, carrots, peppers, and red onion. Add salt and pepper and mix with the olive oil.
Cut four pieces of foil 18 x 12 inches. Evenly distribute the vegetable mixture onto each piece, then add the beef cubes on top.
In a small bowl, add the butter, parsley, garlic, rosemary, thyme, salt, and pepper. Sprinkle the seasonings evenly over the top of the meat.
Fold the foil to make a packet, leaving a small opening for steam to escape.
Transfer the packets to the barbecue and cook for 15 minutes or until the steak is done and the vegetables are tender.
