A grand classic of Asian restaurants, wonton soup is delicious! Here’s the secret behind the tasty stuffed pastries that will allow you to make them regularly at home.

INGREDIENTS
Wontons :
7 ounces (200 grams) lean ground pork
7 ounces (200 grams) of prawns or chopped shrimp
1 tablespoon (15 ml) fresh ginger, chopped
2 finely chopped green onions
1 tablespoon (15 ml) light soy sauce
2 tablespoons (30 ml) Chinese cooking wine (Shaoxing wine)
1/2 tablespoon (8 ml) salt
2 tablespoons (30 ml) sesame oil
50 - 60 wonton wrappers
Broth :
3 cups (750 ml) of chicken broth
2 crushed garlic cloves
1 cm of fresh ginger peeled and sliced
1½ tablespoons (22 ml) light soy sauce
2 tablespoons (30 ml) sugar
1½ tablespoons (22 ml) Chinese cooking wine
¼ - ½ tablespoon (4-8 ml) sesame oil
Garnish :
Finely chopped green onion
Bok choy in 10 cm pieces (optional)
1.5 to 1.75 ounces (40-50 grams) of dry egg noodles, per person (optional)
PREPARATION
Wontons :
Place all the ingredients for the wontons, except the wrappers, in a bowl. Mash with a potato masher until slightly smooth.

Place the wrappers on a work surface. Make small balls of filling with two teaspoons. Wet two sides with water and seal while pushing the air out. Wet one corner and bring the corners together, like a ravioli, then press to seal. (See the video below for the method)

Place the wontons in an airtight container to prevent them from drying out. Boil them in boiling water for 4 minutes, or until they float. Remove with a slotted spoon and place in bowls to serve.
To freeze, do so while they are uncooked and in an airtight container. Do not refreeze if they have been thawed. Cook frozen wontons for 6 to 8 minutes.
Broth :
Place all ingredients in a pot on high heat. Add the white parts of the green onions if any are left from the wonton preparation. Cover and when the broth simmers, lower heat to medium-high and let simmer for 5 to 10 minutes. Remove the garlic and ginger.
If you’re adding vegetables, blanch them in the broth and place them in the bowls.
Serving :
Prepare the noodles as per the package and place them in the bowls. Add the broth and serve.
You can replace the Chinese cooking wine with sherry or sake, or omit it.
