
Make them like the pros.
Pasta, what a wonder. They can be prepared in almost infinite ways. Yet, we have bad habits, even just by rinsing and completely draining the pasta.
To make them like professionals, do not completely drain the pasta, and send them directly into the sauce to finish cooking. The pasta will only be better, as will the sauce.
For thick sauces, prefer wide pasta. For less consistent sauces, opt for textured or spiral-shaped pasta, so they absorb more sauce.
For pasta cooking, do not always follow the instructions on the box, you might overcook them. Do not add olive oil to the pasta water, the sauce will not stick to them. Feel free to add a spoonful of pasta water to the sauce to enrich it, as well as some butter.
Always add fresh herbs last, to best preserve their aroma and textures !
