Muffins generally have an insane number of calories, but these are the delicious exception you've been waiting for! A perfect recipe for a treat without guilt. It also makes for a lower sugar snack for children.

Ingredients

  • 3/4 cup of unsweetened applesauce
  • 1/3 cup maple syrup
  • 1 egg
  • 1/4 cup of Greek vanilla yogurt
  • 2 teaspoons of vanilla
  • 3/4 cup of whole wheat flour
  • 1/4 cup of ground flax seeds
  • 1/2 cup of unsweetened cocoa powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1/2 cup of mini chocolate chips

Preparation

  1. Preheat the oven to 425 °F and grease a muffin tin.
  2. In a bowl, combine the applesauce, syrup, egg, yogurt, and vanilla. 
  3. In a second bowl, mix the flour, flax seeds, cocoa, salt, baking soda, baking powder, and chocolate chips.
  4. Pour the wet ingredients into the dry ingredients. Mix.
  5. Spread the batter into the prepared muffin tin.
  6. Bake for 5 minutes at 425 °F, then lower the temperature to 375 °F and continue baking for another 12 minutes.
  7. Check the center of the muffins with a toothpick. If it comes out clean, they are done. Otherwise, continue cooking one or two minutes at a time.
