
It’s fall, the season for comforting recipes and of course, delicious apples are in season! You don't know what to do with all those apples you picked on the weekend? Here is THE recipe to make!
This recipe may become a classic in your family. Many years from now, your children will fondly remember the smell of your cookies that perfumed your home!
Ingredients
- 1 package of refrigerated pie crust (2 rolls), slightly thawed according to package directions (or homemade dough)
- 1 can apple pie filling (around 21-ounce/595 g)
- 1/2 cup (125 mL) salted caramel sauce (homemade or store-bought)
- 1 beaten egg
- 1 teaspoon (5 ml) of water
- ½ cup (112 g) sugar
- Pinch of cinnamon or to taste
- Pinch of nutmeg or to taste
Preparation
1. Preheat the oven to 350 degrees.
2. Place the apple pie filling in a medium mixing bowl and cut apple slices into bite-size pieces. Reserve.
3. In a small bowl, beat the egg and water together using a fork or small whisk. Set aside.
4. In another small bowl, combine the sugar, cinnamon and nutmeg. Set aside.
5. Place a silicone baking sheet on the work surface and roll out 1 sheet of refrigerated pie dough.
6. Using a 2 1/2 inch round cookie cutter, cut out as many circles as possible and set them aside.

7. Roll the remaining chilled pie dough onto the silicone baking sheet and cut as many more circles as possible using a 3 inch round cookie cutter.
8. Cut the three-inch circles into ¼-inch strips.
9. Place 2.5 inch circles on the silicone baking sheet 2 inches apart.
10. Spoon a spoonful of apple pie filling onto each 2.5 inch round cookie, leaving enough room around the edges to seal the cookies with the beaten egg.

11. Using a finger, rub the dough with the egg around the apple filling of each cookie.
12. Pour approximately 1 tbsp (15 mL) salted caramel over each spoonful of apple pie filling.

13. Place the remaining crust strips on each cookie making a lattice pattern.

14. Press the edges with a fork to seal cookies.
15. Using a pastry brush, brush the top of each cookie with the egg mixture.
16. Sprinkle cinnamon/sugar mixture on top of the cookies.
17. Place in preheated oven and bake for 20 to 25 minutes, or until golden brown.
