Chicken with honey mustard and avocado-bacon salad

If you're craving a delicious, well-garnished and delicately seasoned salad, here's the recipe for you.

Since it takes no more than 25 minutes to prepare, it's perfect for weekday dinners.

You'll love the sweet and slightly spicy flavor of chicken with honey mustard and vinaigrette.
 

Ingredients

Dressing / marinade

  • 1/3 cup (65 ml) of honey
  • 3 tablespoons (45 mL) of whole grain mustard
  • 2 tablespoons (30 ml) of sweet and mild Dijon mustard
  • 2 tablespoons (30 ml) of olive oil
  • 1-2 tablespoons (15-30 ml) of apple cider vinegar (or white vinegar), optional
  • 1 teaspoon (5 mL) minced garlic
  • Salt to taste
  • 4 skinless and boneless chicken legs or chicken breasts


Salad

  • 1/4 cup (65 mL) of diced bacon
  • 4 cups (1 L) of romaine lettuce leaves, washed
  • 1 cup (250 mL) sliced tomatoes or cherry tomatoes, sliced
  • 1 big avocado, pitted and sliced
  • 1/4 cup (65 mL) of corn kernels
  • 1/4 of a red onion, sliced


Preparation

Mix all the ingredients of the marinade and whisk them to combine them.

Pour half of the marinade into a shallow dish to marinate the chicken for two hours, if possible. Otherwise, a few minutes will suffice.

Refrigerate the intact marinade reserved for use as a vinaigrette later.

Heat a nonstick skillet over medium heat with about a teaspoon of oil and roast chicken on each side until golden, crisp and cooked through. (Grill the chicken in small batches to prevent water from escaping.)

Once the chicken is cooked, let it sit for a while

Wipe the pan with a paper towel. Sprinkle the pan with another teaspoon of oil and fry the bacon until it is crisp.

Slice the chicken into strips and prepare the salad with romaine lettuce leaves, tomatoes, avocado slices, corn, onion strips and chicken.

Add 2 tablespoons water in the remaining marinade / vinaigrette and pour over the salad, then sprinkle the bacon on top of the salad.

Season with a little salt and freshly ground pepper to taste (optional).
