24 Oreos, crushed

6 tablespoons (90 g) butter

A pinch of salt


Chocolate mousse :

2 teaspoons (30 ml) of gelatin

2 ½ tablespoons (38 ml) cold water

2¼ cups (395 grams) of chocolate chips

3 cups (750 ml) cream (divided)

½ cup (75 g) icing sugar

8 cups (1,600 g) strawberries, stems removed



2/3 cup (170 ml) cream

2 cups (350 g) chocolate chips

Spray a springform pan with cooking spray. In a bowl, mix crumbled biscuits, butter and salt, then press the mixture into the pan and set aside.

In a bowl, combine water and gelatin, then let sit for 5 to 10 minutes. Heat 1 cup (250 ml) cream over medium-high heat until simmering, remove from heat and add gelatin. Stir until completely dissolved, then pour over the chocolate and whisk until chocolate is melted. Let the mixture cool, and stir occasionally.

Whisk remaining cream with icing sugar until stiff peaks form. Gently combine the whipped cream into the chocolate mixture until fully incorporated.

Spread a thin layer of mousse on the crust. Cut in half a lot of strawberries to press around the inside edge of the pan, then place whole strawberries inside.

Put the rest of the mousse in a piping bag to fill the gaps between the strawberries, then fill the mold and smooth the top. Refrigerate for 4 to 6 hours.

To make the ganache, heat the cream over low heat. In a bowl, put the chocolate chips, then melt them with the hot cream. Let sit 3 minutes and mix until smooth texture. Refrigerate about fifteen minutes or until the ganache is slightly thick and spread all over the mousse.
