Nothing says Fall more than apples! So why not integrate that delicious flavour into succulent homemade muffins. And top everything with almonds, a dream! This recipe is easy and will be loved by the whole family.
1/3 cup (85ml) butter, softened at room temperature
3/4 cup (190ml) sugar
1 cup (250ml) finely chopped apple (1 large apple)
1 teaspoon extract vanilla
1/2 teaspoon almond extract
1 and a half cups (375 ml) flour
1 and a half teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar (for tops of muffins)
1/4 cup (65 mL) sliced almonds
Preheat the oven to 375 ° F (190 ° C).
In a large bowl, cream the butter and sugar using an electric mixer.
Add the eggs, vanilla and almond extract. Beat. Add in the chopped apples and stir.
In a small bowl, combine the flour, baking powder and salt. Add the flour mixture to the wet ingredients and gently stir until combined.
Pour into well greased muffin tins. Sprinkle with sugar and add the almonds on top.
Bake for 15 to 18 minutes or until lightly browned. Store in an airtight container or in the freezer. Enjoy!
You can enjoy these still warm with butter! For an even more autumnal taste, you can add pumpkin spice or cinnamon!
