Easy Thai shrimp soup

In cold weather, a soup provides an excellent source of comfort.

With its mix of flavors, this Thai soup will warm you up, and it will make you travel!


  • 1 tablespoon (15 ml) coconut oil
  • 1 onion, finely sliced
  • 1 red pepper, finely sliced
  • 1 carrot, cut into juliennes
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) ginger, grated
  • 1 red chili, finely sliced
  • 1 tablespoon Thai green curry paste
  • 4 cups (1 L) vegetable broth
  • 1 cup (250 ml) coconut milk
  • 1 tablespoon (15 ml) fish sauce
  • 1 lb (454 g) shrimp, shelled
  • 1 package of rice noodles
  • 3 green onions, finely sliced
  • 2 tablespoons (30 ml) fresh coriander, chopped
  • lime


In a big saucepan or a Dutch oven, heat coconut oil over medium-high heat.

Add the onion, red pepper and carrot. Cook 4 minutes or until vegetables begin to soften.

Add garlic, ginger, chilli and green curry paste and cook for another minute.

Add broth, coconut milk and fish sauce.

Simmer the mixture for 5-10 minutes.

Add shrimp and noodles.

Cook for 3-4 minutes until the shrimps turn pink and opaque.

Add the green onion and coriander.

Serve with fresh lime wedges.
