Grilled bread with garlic, shrimp and avocado salad recipe.

Avocado toast are trending right now, but have you ever tried shrimp and avocado on toasted garlic bread? If not, you should try this recipe, it's heavenly! 

Ingredients

  • 1 sliced ciabatta bread (cut into 1 cm) 
  • 1/3 cup garlic butter


Garlic Shrimp:

  • 2 teaspoons garlic (minced) 
  • 1 teaspoon paprika
  • Juice of half a lemon 
  • 1 pound shrimp
  • 1/4 cup fresh parsley (chopped)


Avocado salad:


  • Cooked shrimp
  • 1 avocado (diced)
  • 1 cup cherry tomatoes (halved)
  • Juice of half a lemon 
  • Salt & Pepper to taste 

Preparation

  1. Preheat the oven or BBQ to grill or broil on medium-high heat. 
  2. Place the sliced bread on a baking tray lightly sprayed with cooking oil.
  3. Spread a thin layer of garlic butter on each slice and grill/broil until it's golden. Set aside. You can prepare the other components while the garlic bread is roasting, don't forget to keep an eye on it!  

Garlic Shrimp:

  1. In a medium mixing bowl, combine the garlic, paprika, lemon juice and the shrimps. Season with salt and pepper to taste. 
  2. In a large frying pan, drizzle a teaspoon of oil and cook the shrimps for about 3 minutes on each side. Don't overcook. Remove from eat and top with fresh parsley, then set aside to let cool slightly. 

Avocado Salad:

  1. In another mixing bowl, combine the avocado, tomato, lemon juice and salt in a bowl. Then, add in the shrimp, and gently mix. Spoon the shrimp and avocado mixture on the toasted garlic bread. Serve warm and enjoy!
