As the cold weather starts to settle in, there is nothing nicer than comfort food. And when we talk about Comfort Food, one of the first dishes that comes to mind is certainly a tasty homemade au gratin onion soup.
Just looking at the pictures and watching the video below will get your moth watering.
Ingredients
- 5 yellow onions, peeled and sliced
- 3 tablespoons butter
- 4 cloves minced garlic
- 3 tablespoons flour
- 1/2 cup of dry white wine
- 6 cups of beef
- 1 teaspoon Worcestershire sauce
- 1 bay leaf
- 3 sprigs of thyme (or 1 teaspoon dried thyme)
- Salt and pepper
- 1 sliced baguette
- Grated cheese (Gruyere, Asagio, Switzerland or Mozzarella)
Preparation
In a large saucepan, melt the butter and add the onions. Cook until golden and caramelized, about 40 minutes, stirring every few minutes.
Add the garlic, cook for 1 minute and stir in the flour and cook for another minute.
Stir in the wine to deglaze the pan and scrape the bottom of the pan.
Add broth, Worcestershire sauce, bay leaf and thyme. Cover partially, bring to a boil and simmer for 10 to 15 minutes. Season to taste with salt and pepper. Remove the bay leaf and sprigs of thyme.
Preheat the oven to 400 degrees F and place the sliced bread in a single layer on a baking sheet. Bake for 6 to 8 minutes.
Increase the oven temperature to broil.
Place your soup bowls on a baking sheet.
Divide the soup in each of them, add one or two slices of baguette and garnish with cheese.
Grill in the oven for 2 to 4 minutes.
Remove and serve immediately.
