
Even my kids love carrots since I started cooking them that way!
Ingredients
- 2 pounds of large carrots, cut into 2-inch pieces
- ½ cup of butter
- 3 tablespoons of honey
- 2 garlic cloves, chopped
- Salt and pepper
- Parsley, chopped (for garnishing)
Preparation
- Preheat oven to 425 degrees F
- In a saucepan, heat the butter and whisk for a few minutes, until the butter begins to get foamy and brown.
- Add honey and garlic and remove from heat.
- In a large bowl, place the carrots and pour the butter on top. Mix.
- Transfer the carrots to a large baking sheet. Season with salt and pepper.
- Bake for 15-20 minutes or until carrots are tender.
- Garnish with parsley.
