Ingredients:

  • 1/4 cup cold water
  • 2/3 cup ice-cold water
  • 1 cup granulated sugar
  • 2/3 cup light corn syrup
  • 1/4 teaspoon salt
  • 2 packages gelatin (unflavored)
  • 1/4 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1/4 cup cornstarch
  • 10 small truffles
  • 1 cup milk chocolate, melted
  • Hot chocolate, your favourite brand or homemade

Other material needed

  • Cookie cutter, flower shape
  • Small cupcake mold, silicone

Preparation :

  1. In a small saucepan over medium heat, stir together 1/4 cup water, sugar, corn syrup, and salt. Cover and let cook for 5 minutes. After 5 minutes, uncover and continue to cook until the syrup reaches 240ΒΊF. Remove from heat and set aside.
  2. In a stand-up mixer, mix slowly 2/3 cup water and 2 packets of gelatin. Add in the syrup in small batches. Then turn the mixer up to high and whip for 12-13 minutes or until the mixture is thick and fluffy. Finally, add the vanilla extract and keep mixing for a little bit longer.
  3. In another small bowl, combine powdered sugar and cornstarch.
  4. Prepare a baking sheet by lining with parchment paper and grease with butter. Sprinkle with half of the powdered mixture.
  5. Pour the marshmallow mixture into the sheet pan and spread it out evenly using a spatula or spoon.
  6. Sprinkle the remaining powdered mixture on the marshmallows and let sit for at least 6 hours or overnight. They need to be firm.
  7. Melt milk chocolate and pour into the molds. You only need a thin layer of chocolate so pour out the excess. Set aside in the refrigerator and allow to set. Once the chocolate has hardened, pop out of mold.
  8. Form flowers out of the marshmallow using a flower cookie cutter. Lay on a cornstarch-dusted surface. If you wish, place small candy beads in the middle.
  9. Dip the base of the marshmallow flower into a little melted chocolate and then place inside the chocolate cup. Let sit and allow to cold completely.
  10. Gently drop a flower in your favourite hot chocolate cup and watch it bloom! Enjoy!
