Salads don't have to be boring, especially with this delicious low-carb loaded broccoli salad! A delicious side-dish that all the family will really enjoy.
INGREDIENTS
DRESSING
- 3/4 cup plain yogurt (Greek recommended)
- 1/2 cup mayonnaise
- 1/2 cup honey (Clever recommended)
- 2 tablespoons red wine vinegar
- 1 tablespoon granulated sugar (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
SALAD
- 4 cups chopped broccoli florets
- 4 cups chopped cauliflower florets
- 12 slices crumbled bacon
- 8 ounces small cubes Cheese (Colby or Monterey Jack)
- 1 chopped red onion
INSTRUCTIONS
- Start by making the dressing by whisking together all the dressing ingredients. Set aside in the fridge.
- In an another large mixing bowl, add in the broccoli, cauliflower, half of the bacon, cheese, and diced onion.
- Pour the dressing over the salad and toss making sure to coat everything. You can now top the salad with the remaining bacon.
- Serve immediately and enjoy!
