Melon, cucumber and refreshing tomatoes contrast with bright red onion, feta cheese and fresh mint, for an enticing combo of colors, textures and flavors that will become a staple of your summer dinners. This fresh, healthy and surprising salad proves that there is more than one way to eat watermelon!

Ingredients

  • 3 cups watermelon (cut in small cubes)
  • 1 cucumber (peeled, seeded and diced)
  • ½ red onion (sliced)
  • 2 tomatoes (diced)
  • ½ cup fresh mint (coarsely chopped)
  • 1 lemon (zested and squeezed)
  • ¼ cup (65 ml) olive oil
  • Salt and pepper, to taste
  • ⅓ cup (85 g) crumbled feta cheese
  • ⅓ cup (85 g) Kalamata olives, optional

Preparation

  1. In a large bowl, combine the watermelon, cucumber, red onion, mint, tomatoes, lemon zest, lemon juice and olive oil.
  2. Season with salt and pepper to taste and mix well.
  3. Sprinkle with crumbled feta cheese and serve. There is nothing more simple!

Note: You can also prepare this vegan salad by replacing the feta cheese with Kalamata olives so it doesn't lose this tangy element. And if you're not a fan of mint, try basil instead.

You can sprinkle this salad with a lemon and olive oil vinaigrette which adds a subtle, slightly spicy touch.

A little salty and a little sweet, this summer Greek salad is a perfect accompaniment to a Mediterranean meal with crispy bread, grilled meat and vegetables or falafels.
