The good news is that the preparation of the soup is simple and the choice of ingredients is very varied according to the tastes you want.
Ingredients:
A cup of vegetables of your choice: peppers, onions, celery
A cup of dark green leafy vegetables such as spinach or kale
A small cup of assorted root vegetables: think carrots, turnip, beets
Half a teaspoon of homemade garlic and ginger paste
3 teaspoons of spices according to your choice
A quarter of a liter of vegetable broth
A quarter of a liter of water
A pinch of salt and pepper
Preparation:
You should start by the root vegetables. We recommend steaming them as it makes it easier to incorporate these vegetables into your soup.
Add the spice blend into your saucepan. (do not use a small saucepan)
Heat over low, after a few minutes you will smell a pleasant smell.
Then add the green leafy vegetables after roughly chopping them. Make sure to mix them well with the spices.
Pour in half of your vegetable broth and cook everything slowly for 20 minutes.
Add the rest of your broth and the cup of vegetables (pepper, onion and celery) and cook for another 10 minutes.
Finally add the root vegetables that you steamed in the first step.
If necessary, add a small volume of water depending on the degree of consistency you want. Let the soup cook for 5 more minutes. Enjoy!
