Muffins are a wonderful solution that rescues many hurried mornings when children do not have much time for breakfast and/or when parents run out of time to eat a proper breakfast. Muffins are also a nutritious snack for both young and old. They are perfect for any occasion and they can even be served as a dessert. So we can never have too many muffin recipes. I'm sharing a new one this morning with you that is sugar-free and will appeal to children and parents.

What's wonderful about this recipe is that you can add your favorite ingredients to it to change the recipe as you see fit and create a new muffin recipe every time. Plus, this recipe is so easy to make that you can make it with the kids or, if your kids are old enough, they can cook it themselves.

Once you have tasted these muffins, you'll not go back to any other old muffin recipes again. In addition, they freeze very well so you can prepare a large amount and keep them in the freezer for 3 months.

That's wonderful, is it not?

2½ cups oatmeal
1 egg
1½ cups of milk
½ cup of maple syrup

Option: Apple and cinnamon, banana and peanut butter, raspberries and chocolate chips.

Preheat oven to 350 degrees F and butter a non-stick muffin tray.
In a bowl, mix the oats, egg, milk and maple syrup.
Spread evenly in the muffin pan.
Add your favorite toppings: apple and cinnamon, banana and peanut butter, raspberries and chocolate chips.
Cook for 25 minutes.
Let cool a few minutes before removing them from their moulds.

You can serve them hot or cold, great either way.

These tasty and moist muffins freeze very well and can be kept for up to 3 months in the freezer.
