Because everyone loves it, here is a simple and fast version of it!
- 1 pound chicken (cut into pieces)
- 1/2 tsp. kosher salt
- 1/4 tsp. pepper
- 1/4 tsp. garlic salt
- 3/4 cup cornstarch
- 2 eggs, beaten
- 1/2 cup canola oil
For sweet and sour sauce:
- 1 cup sugar
- 1/3 cup ketchup
- 1 tsp. garlic salt
- 1/2 cup + 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
Preheat the oven to 325 degrees F and put cooking foil on a baking tray.
In a large ziploc bag, combine chicken, cornstarch, salt, pepper and garlic salt, shake until chicken is well coated.
Heat 1/4 cup of oil in a large skillet. Dip the chicken in the egg mixture and place it in the frying pan. Brown the sides of the chicken, about 2 minutes. Transfer the chicken to the prepared plate.
In a bowl, whisk all the sauce ingredients. Pour the sauce over the chicken and cook in the oven for 20 minutes. Turn chicken over to coat evenly with sauce and continue cooking for another 15 to 20 minutes.
Serve with rice and steamed vegetables.
