As an appetizer or a side dish, these Italian stuffed avocado halves will greatly please your guests.

They are garnished with basil pesto, balsamic vinegar, small sweet tomatoes and mozzarella balls. And, if you happen to have fresh basil in your garden, use a few leaves to garnish your avocado just before serving them.

Make sure you use perfectly ripened avocados. If they are not ripe enough, they will have a sharp, sour taste and will be difficult to peel and cut in half.

This recipe is super simple and can be prepared in less than 10 minutes. Did you know that the healthy omega-9 fats in avocado help prevent food cravings? It is a powerful ally to add to your healthy eating habits!

The following recipe provides 4 avocado halves, containing about 341 calories each.

Ingredients

  • 1/2 cup (125 ml) grape or cherry tomatoes, halved
  • 4 oz (120 g) small balls of mozzarella (or bocconcini)
  • 2 tablespoons homemade or store-bought basil pesto
  • 1 teaspoon (5 mL) minced garlic
  • 1/4 cup (65 ml) olive oil
  • Salt and pepper seasoning, to taste
  • 2 ripe, peeled avocado, cut in half, without the pit
  • Fresh basil leaves, to garnish (optional)
  • 2 tablespoons (30 ml) balsamic vinegar reduction
  • 2 tablespoons (30 mL) chopped fresh basil

Preparation

Pour the tomatoes, mozzarella balls, pesto, garlic, olive oil, salt and pepper into a bowl.

Mix well to blend all flavors evenly.

Cut the avocados, remove the pits and peel.

Arrange prepared avocado halves on a plate with fresh basil leaves.

Distribute the Caprese filling into each avocado half and drizzle with balsamic vinegar reduction.

Garnish with freshly chopped basil. Serve immediately.

Notes:

If you cannot find mini mozzarella or bocconcini balls, you may use the larger ones by cutting them in half.

In order to make a balsamic vinegar reduction, all you need to do is pour some balsamic vinegar into a saucepan on the oven at medium-low heat. By doing this, the vinegar will reduce by half and the taste will be perfection! However, you can also use the balsamic vinegar as is, if you wish.
