A comforting soup full of flavors!
1 tablespoon oil
1 pound boneless skinless chicken breast or chicken cooked and shredded
1 cup onion
4 1/2 cups water
4 cups chicken broth
1/2 teaspoon garlic
1/2 teaspoon thyme leaves
2 Laurier leaves
1/2 cup diced carrots
1/2 cup diced celery
1 pack of rice
In a saucepan, cook the onion until tender.
Add water, chicken stock, garlic, thyme and Laurier leaves. Bring to the boil.
Add carrots, celery, rice and chicken. Simmer 10 minutes or until chicken is cooked through. Remove the chicken and set aside to let it to cool.
Cover and simmer soup 20 more minutes or until rice and vegetables are tender, then stir in shredded chicken.
