Who does not like chips and salsa? A classic accompaniment with a good beer! Here is a tasty salsa with small pieces of tomato, onion, jalapeño, coriander and lime juice.
1/4 white onion, peeled
1 fresh jalapeno, stem removed and cut in half
2 cloves of garlic, peeled
1 (14.5 ounces) canned diced tomatoes and garlic or 2 fresh diced tomatoes
1/2 lime, for the juice
1/2 teaspoon of kosher salt
2 tablespoons fresh coriander
Add the onion, jalapeño and garlic to the bowl of your food processor. Mix 5 or 6 times.
Open the lid, scrape the sides. Add the remaining ingredients and do it again twice.
Transfer to serving dish and serve immediately or store salsa in refrigerator.
*** Salsa can be stored in the refrigerator for 3 to 4 days.
