The secret of the tenderness of beef, pork, veal and even poultry: use baking soda!
Spread your meat on a board and sprinkle it with baking soda. Rub the powder on the meat to spread it out.
Allow to stand for 2 to 5 hours in the refrigerator.
Then rinse the meat with very cold water to remove the baking soda.
Wipe the meat with a paper towel to remove any moisture and cook it in a frying pan, BBQ, oven, simmer.
You will be amazed at the difference in taste and texture of your meat: it will be the most tender you have eaten!
